Well, where you heat up a combination of sugarcane until all the water is gone and only the sugar crystals remain. The process of production was long and inefficacious—not to mention that it made sugar costly and inaccessible to most of the population. 

Getting to the Core of Sugar Production with Centrifuges

Everything mostly got better when sugar centrifuges were invented in the 1800s. Sugar centrifuges are very fast spin to separate the sugar crystals from the liquid mixture. This spinning is faster and more efficient than boiling, which produces much more sugar at the same time. Simply put, this innovation made sugar cheaper to mass-produce, and lot more people were able to enjoy it. 

When producing sugar, the primary aim is to separate sugar crystals from a liquid suspension that contains impurities. That is where sugar centrifuges help. The sugarcane is boiled first into a thick syrupy liquid called syrup. This syrup contains quite a bit of sugar but Impurities and unwanted materials. This syrup is then transferred into a sugar centrifuge after boiling.
